Home-baked sourdough made with ancient Sicilian grains — Maiorca, Tumminia, Russello, Senatore Cappelli. Grown by small farmers with natural methods and stone-milled: they keep their fibre, vitamins and minerals. Gluten and starch in balance: lighter to digest, and it keeps you full for longer. Slow-baked, with a crackling crust and an aromatic crumb.
